You won't find liver in menudo and tripe is not an organ. And
without tripe, you can't make menudo.
Set aside the food phobias and have some tripe.

Menudo is tripe soup. Remove the tripe and what do you have? If you don't
like tripe, you don't like menudo. I'd suggest something else.

honeycomb tripe and cow's feet (pata) are the best to use for menudo.

Without the tripe it's what we call Posole you can use chicken or pork.
I make Menudo for my whole family once a month. Everyone comes over
sometimes 25 for breakfast. I make the BEST... I cook mine overnight
so it's ready for breakfast.
10 lbs of Menudo. Cut washed and rinsed 3-4 times in water and lemon
juice, (very important for me) the lemon juice gets rid of anything
nasty especially the odor.
you can subsitute tripe for chicken or pork (just as yummy)
I add a whole onion
whole head of garlic
California Chili powder
New Mexico Chili powder
salt
pepper
cumin
I cook mine overnight about 7 hours then add two lg cans of Hominy...
for sides I cut up onion, celantro, lemon.
For Posole sides: cabbage, onion, celantro, lemon, radishes
If you use chicken or pork, cook time is just a couple of hours

What kind of menudo do you have in mind, then? There are two very
different dishes known under that name: Mexican and Filipino. Mexican
menudo is made with tripe quasi by definition; tripe is its raison
d'être. Filipino versions are never made with tripe but do often
include liver, though not always. In case it is the Filipino version
you are looking for, here is a liver-less variation, from

(Pork and Mixed Vegetable Stew)
Ingredients:
2 tbsp Cooking oil
1/2 k Pork, cut into
1/2-inch cubes
3 med Potatoes, cut into 1/2-inch cubes
3 med Carrots, cut into 1/2-inch cubes
1 c Chick peas, cooked
1 c Green peas, cooked
1 med Red bell pepper, cut into cubes
1 med Green bell pepper, cut into cubes
1/2 c Raisins
4 c Tomato sauce
3 med Saba banana, cut into cubes
1 med Onion, cut into cubes
5 cloves Garlic, peeled and chopped
salt and pepper to taste
Directions
1. Saute pork cubes in garlic and onion until almost done.
2. Add in potato and carrot cubes. Bring to a boil.
3. Add in tomato sauce, and bring to a boil.
4. Add in banana cubes, chick peas, green peas, and bell peppers. Bring
to a boil.
5. Add salt and pepper to taste. Add in raisins.
Ick, i have tried it, especially in PHO. But, i just don't like the
texture!

You're wise to avoid tripe. Although the infectious
agent for Mad Cow Disease resides mostly in the
central nervous system tissue, it also is abundant
in the intestines, which is why tripe is on the list

Menudo was one of my favorite foods, and Juanita's
brand of canned menudo was better than most menudo
I've had in restaurants. The canning process gives
it a delicate, gelatinous texture I've never had
in menudo made from scratch. It's the only canned
product of any kind I'd say was better than fresh.

You just have to get past that and go for it. Then you can
graduate to sea cucumbers, fish maw, and jellyfish.
Have a few drinks first and build up an appetite. It's go down

broccoli soup without the broccoli.
That reminds me of something we saw in some store somewhere --
vegetarian chile con carne.
What you want to look for is posole.
I understand that menudo is tripe, but the spices is also what makes it
unique, i would like to do it so i have the flavors without the tripe.
if posole is the same thing without the tripe then so be it!

Maybe it's just me, but whenever I start with 1/2 kilogram of pork and
try to cut it into cubes, they always come out 1 centimeter cubes. The
only way I can get 1/2 inch cubes is to start with a pound of pork.

"menudo," they took me to the meat counter and pointed out the honeycomb
tripe. Never could get them to understand that I meant the soup, but my
Spanish is practically nonexistent.

where was this? dont forget, mexicans will take delight in trying trip
up a gringo. what he was probably doing was showing you they main
ingredient. if you want canned menudo go to the ethic aisle of you
grocery store, it should be there. however i would think that it be best
to get it fresh made.

As someone else said, "menudo" is the word for tripe in Spanish. Unless
the poster also indicated "sopa" for soup, it would be a logical answer to
point them to the tripe in the meat case.
