Mashed potatoes and truffle gravy

  1. Here at the Feed Bag, we often get asked for the recipe for our mashed
    potatoes. They are extremely easy to prepare. We usually serve them with a
    delightful truffle gravy.

    Basic mashed potatoes

    Half a cup of mashed potatoes, seasoned with a pinch of sea salt, white
    pepper and a teaspoon of sugar

    Stick 1 anchovy in the center of the potatoes

    Sprinkle a pinch of caraway seeds onto the potatoes

    Garnish with diced red bell pepper and parsley

    Truffle gravy

    To a half a cup of extra virgin olive oil, add one chopped anchovy, a
    quarter teaspoon of cocoa powder, a quarter teaspoon of lime zest, and a
    pinch of saffron.

    Gently heat until a creamy consistency is achieved.
    Take the pan off the flame and add a tablespoon of finely chopped truffle.

    Mix well, then put the pan back over the flame for one minute, stirring
    constantly.

    Boil cubed white potatoes, skin-on or not (your choice) in lightly salted
    water. Drain. Add butter and cream or milk. Mash with a ricer or if you
    prefer, use a hand mixer to beat until just smooth. Season with salt &
    pepper to taste.

    Oh no, this is far worse than a Tango recipe.

    This recipe is over sweetened having an entire teaspoon of sugar for a
    half cup of potatoes.

    This recipe is expensive, having both a pinch of safron, for the same
    half cup of mashies, and truffle gravy.

    And, if opinions are due, I have to say this is far more disgusting
    than any econo-can driven Tango recipe. The flavor combination is
    anchovy (added twice, so it gets the top of the list), safron, caraway,
    sugar, truffle, cocoa, and lime. Doesn't the just scream to have some
    milk of ipecac added to save time ? Maybe it isn't even needed.
