Potato cakes - mix with sauteed diced onions & minced
garlic, salt & pepper, chopped parsley, and an egg to bind,
form into pattys, fry in 1 tbsp butter and 1 tbsp olive
oil...yum!

Use the leftovers to top a shepherd's pie. I also make a
meatloaf pie -- fill a pie crust with your favorite
meatloaf mixture. Bake. When the meatloaf is almost done,
top with mashed potatoes and bake until the potatoes are
golden brown.

We make a similar dish here in PA German country except
rather than fry as patties, we turn it into a loaf pan and
bake til lightly browned on top and toothpick comes out
clean. (Leftover potato loaf can be sliced/fried for
breakfast.) The mixture can also be used for pierogies or
another German dish called "Old Shoes" where the potato
mixture is sealed in larger dough rounds and boiled in water
(kinda like really big pierogies).
