    You can buy pasteurized egg whites and use those. They're still raw, but
    were heated to kill any possible organisms (usually salmonella in eggs).
    They come in a carton like whipping cream.

    Marzipan with EGGS?!?! I don't think that's in the original receipe.

    100 g blanched almonds, 100g icing sugar, about 2 TBspoons rosewater
    is the receipe that I have used. Grind almonds very fine, mix in icing sugar,
    add rosewater and lots of elbow grease mashing and kneading until it all
    combines. You might want to hold half the rosewater and only add it in as
    needed - if you get it too wet it's awful.

    B.t.w. I've come up with an alternative: substitute macadamia nuts for almonds,
    substitute water for rosewater and add 3-4 drops of [bitter] almond essence.
    Even better than the original ... (My wife calls it peterpan <g>😉.

    Marzipan with EGGS?!?! I don't think that's in the original receipe.

    There is no singular original "receipe"... egg white is is a typical
    ingredient in marzipan.
