I'm still procastinating even though between posts the salsa is almost
ready to go on too cook. What you could do is sub the spaghetti with
spaghetti squash then top with tomato sauce. It is a fair imitation of
regular spaghetti while being low carb and vegetarian. It makes for a
real cheap meal! Just in case you don't know how to cook it, cut in
half and remove any seeds. Place cut side down in pan with water.
Bring to a boil then let squash steam a little. Using a fork remove the
spaghetti squash which will resemble regular spaghetti. Top with your
favourite sauce. Oh kili, I was going to tell you I regularly check the
vegetarian websites and newsgroups because they have great ways to do
veggies for something a little different. Since you are doing the low
carb thing it might be an idea for you. They come up with some really
    neat ideas!

Thanks, sweetie! I've never personally made spaghetti squash because I'm
leery of it. I'm just gonna have to bite the bullet one of these days and
do it. Thanks for the reminder.

Lunch is hit or miss...don't know if I'll be eating it or not. More likely
than not, I'll slice off a few hunks of the longhorn Colby I got in
Wisconsin and have it with some crackers.
Dinner, penne pasta with sun dried tomatoes, grilled turkey tenderloin,

Oh, now that sounds heavenly! Beats my fried chicken to a pulp. :~)

    kili

Ohhhh fried chicken has it's place too ;-). Actually this beef bourguignon
is heavenly but a huge pain in the a** to make. I've posted my recipe
before. Whenever I serve it to guests they always ask for the recipe but I
doubt any of them make it after reading the recipe. I devote a whole day to
cooking it after the meat, vegetables, herbs and seasoning marinate in red
wine for a day. Then separating the meat from the marinade and vegetables,
drying the meat on paper towels, browning the meat in several batches in
bacon fat and vegetable oil. Then cooking for a few hours, then separating
the meat *again* from the stewing liquid and the vegetables. Straining the
vegetables to extract all their flavor and discarding them. Then returning
the meat and strained stewing liquid back into the pot and adding peeled,
quartered potatoes. Cooking that till tender. Cook up more bacon till crisp.
Sauté mushrooms in the bacon fat, add that to the pot and simmer some more.
Add peeled baby onions and peas, simmer some more and serve topped with the
    chopped crisp bacon.

I make this about 4 times per year and I bi*ch and moan every time but no
stew I've ever had packs this much flavor! It is also very nice to come home
from work, defrost a bag, heat and serve. I did the tomatoes that I used
in the [censored] last week. Slow cooking over low heat in the oven for several
hours along with herbs, garlic slices and some olive oil. They dry out
enough so that the [censored] doesn't get soggy. I cheated and used an all butter
purchased puff pastry though for the [censored].

LOL I don't fry food, except to pan-fry tilapia or other quick-cooking fish
in a very little bit of oil. The first time I fried chicken pieces back in
1982 the oil popped and fused my silk blouse to my chest where the oil hit
me. Not a good experience 🙁 Took me at least 15 years before I tried
frying chicken on the stove-top again. It's just not something I do.

I will... next time I fry chicken. I haven't fried chicken since
    some time in the 1990's.

Well, what's the hold up, woman?:

    kili

LOL I don't fry food, except to pan-fry tilapia or other quick-cooking

1982 the oil popped and fused my silk blouse to my chest where the oil hit

frying chicken on the stove-top again. It's just not something I do.

I think the key is low and slow. We fry our chicken on a really low heat -
prevents splattering - and it still turns out great. The chicken isn't
overdone, the coating is crispy and there isn't too much of a mess. A
breast can take about 20 minutes to cook (don't touch that, Sheldon!).

  15. we're having a california-style hominy casserole with sour cream,
monterey jack, and green chiles, and some beans on the side. thought i
had black beans but it doesn't look like i do after all, so i'm cooking
up some red kidney beans with tomato paste, sort of a
mock-chili-without-spice concept. no salad tonight but some cubed
    honeydew melon.

and a crumb-topped peach pe with vanilla ice cream for dessert.
    yuum!

You've got to try the cornmeal mixture. Gosh, it's so much better
    than
anything you can buy! All we do is cornmeal mix, garlic, pepper and a
little salt and it gets so nice and crispy! It's absolutely yummy.

That sounds really yummy, Kili! I very rarely fry chicken, but that
sounds like something worth trying. Maybe I could do an oven-fried
    version.

You use fresh minced garlic, not garlic powder, yes?

Nope, actually we use garlic powder, but if you bake it? Why not use real?
I think baking would be wonderful.

  18. I am roasting a chicken tonight, for my first cooked meal in the
apartment here in Fairfield. I am cooking it a la Marcella Hazan,
Chicken with 2 lemons. It uses no fat..and is essentially no work....
    And it tastes glorious!!!
I am going to modify it a bit this time though.. I got some Trinidad
seasoning at Penzeys when I went through Phoenix..and I am going to
try that along with the salt and pepper. It may ruin it, but ya never
    know...
Along with that, a salad mix from Trader Joes...and a very ripe peach
    for dessert!!!
Yay!!!!!!!! I am back in California where good and RIPE fruit
    abounds!!!!

I'm wanting french dip roast beef but also watching the Eagles vs.
Raiders and rootin' for the Raiders, in Eagles territory, so I don't
know if I'll make it to the kitchen after the game, alive.

    Happy fried chicken!

It's chilly, rainy and crappy here, which ruined my Sunday
gardening plans. I'm cooking up a big pot of chili. I hesitate to
call it poblano chili but I've some poblanos and a couple of
habanero left to add to the pot. I'll post a pic when it's done on
abf. I'm thinking some jalapeno cornbread and a salad to go with.
That should use up just about all my peppers.

Has Rita hit you already, Michael?

    kili

I guess it's the aftermath. It's not storming but a long, slow,
dreary rain. The rain is steady and currently washing all of my
newly put down grass seed around. I'm about to jump in the shower
while the chili simmers. Then I'll put on my jammies, make the
cornbread and salad and chill out for awhile to see if the ever
absent Steven makes it home in time to eat.

Michael <- will put in some scary movies

Oooh, what scary movies?! We're getting Rita fallout too. Had some wind
last night but after that just dreary rain as you describe. Nice cool
temps, though. I'm having chili, too. In fact I'd better eat some before
    it gets too late!

P.S. One of the feral cats came inside the garage and let me pet it.
I don't think it feels good. It was asleep on the hood of my Jeep
for a bit. I made it a little bed and put the bed on the Jeep and
eventually the kitty snugged up in it.

Awwwwww. I don't think I've heard about these feral garage kitties.
