lunch bag ideas

  1. I had such good intentions of taking left overs for lunches. But
    people always seem to drop by and eat up what was planned as left over.
    What fun easy to make sandwiches and non sandwich things do you quicky
    make for lunch bag meals when what you planned is gone? Maybe I just
    need a better stocked fridge of lunch meat and cheese? Kibbe, meatloaf,
    any creative ideas of things that freeze well and reheat in microwave
    with good result. TIA

    I did a baked chicken-on-a-bed-of-rice dish a couple weeks ago, and it
    froze and then reheated in the microwave beautifully. Two of my
    favorites are enchiladas (cover with shredded cheese before nuking, or
    even before freezing) and stuffed green peppers (stuffing is rice,
    cheese, diced tomatoes, herbs, ground beef - parboil the green peppers
    before stuffing).

    Tamagoyaki (Japanese-style omelets) are good in lunch boxes. Shrimps
    are quick to cook and make great lunch boxes too. It is good to always
    have some food available that you can use as a wrapper, like bacon,
    ham, nori sheets (seaweed), eggs (cooked as a very thin omelet),
    spring-roll wrappers, etc. They help you make something out of the
    tiniest bit of leftover. I keep always some eggs in the fridge and corn
    and green peas in the freezer. They make quick additions to leftovers
    or can be used in salads or omelets. Cherry tomatoes for a quick touch
    of color. Imitation crab sticks are also good to have. They keep a long
    time and you roll them in a wrapper food or use in salad or omelets for
    a quick something when you have nothing.

    You mentioned imitation crab sticks. I like these in a light
    salad...just chopped celery, green onion, red bell pepper. I use a bit
    of mayo and some creamy poppyseed dressing. Season with Mrs Dash. Let
    sit for a while...good as a side dish with burger or filet. Very
    versatile. And not expensive. I bought a double pack (about 12 pieces)
    for 2.99 cdn.

    Not to be mean or anything, but you guys must get a lot of time for
    lunch.
    The last shop I worked in before I retired allowed 1 five minute break
    a day and 20 minutes for lunch including the time it took you to wait
    in line to check out at the time clock. 99% of the time we just sat
    down at our machines and ate a candy bar and didn't bother with lunch
    as it was almost over by the time we clocked out. Don't get me started

  6. This is what we are having for lunch tomorrow. 2 days ago I made cajun
    chicken (w/rice and beans & cornbread). We still had a very healthy
    size chicky breast left. So tonight I sauteed some 'shrooms in
    butter,while they were cooking I shredded the chicken breast and then
    added it to the mushrooms in the pan, added some roasted red bell
    peppers (diced). Put it all on a crusty roll w/Swiss cheese for DH and
    mozzarella for me. Im very good at reincarnating leftovers. Hubby
    doesnt like to have the same thing for lunch that he had for dinner the
    night before. So, Ive learned to take leftovers and make them into
    something different.
    Leftover chicken or beef are the easiest for re-inventing for lunches.

    I make wraps (ham,turkey or veggie) for DH - and then throw in fruit
    for the side.

    For the Ham, I use applewood-smoked cheddar and bacon cheese spread,
    ham, medium cheddar cheese, lettuce, and tomato. I make some on tomato
    tortillas, some on plain.

    For the Turkey, I use garlic and chive cream cheese spread, turkey,
    provalone, lettuce, avacado and some with tomato. I put some on
    spinach tortillas and some on plain.

    For the Veggie, I use avacado, the two cheeses, lettuce, tomato, black
    olives and thin slices of marinated (Italian dressing) grilled zuchini
    and portobella mushrooms (The day before I make lunch, I
    marinate them an hour or so, and grill them on my George Forman.
    Drain them and chill them before use). I made some wraps with cheese
    and some
    without (Vegan). All on plain tortillas.
