low carb muffins

  1. Ok , I know I asked for recipes for muffins , but with new people coming on
    our news group I thought I would ask again. love them for lunch with cheese
    , it makes a nice change from a salad.hugs BettyLou

    what you are talking about keep your stupid mouth shut.No body want's you

    I hate to say it Betty, but Atkins fake low carb "muffins" contain 8
    grams of carbs (fiber already subtracted). Not one carb.

  6. I love making homemade low carb muffins too.

    Here are two links to two of my favorites:

    This is a cinnamon muffin recipe using flaxmeal but it can easily be
    altered to use other spices!

    That one is orange sour cream cakes using nut flour as the base. That
    one is really good and you can always replace the sour cream with
    flavored yogurt and make something different than orange flavor!

  9. FLAXSEED MUFFINS - makes 6

    1/4 c. ground flaxseed
    1/4 c. protein powder
    1/4 c. ground hazelnuts or almonds
    1/2 c. DaVinci sugar-free syrup, any flavor
    2 T. oil
    1 egg
    1 tsp. baking powder
    1/4 tsp. salt
    Bake at 350 degrees for 25-30 min.

    According to Fitday, each muffin is 90 calories, 3 gr. carb., 3 gr. protein
    and 8 gr. fat.

    Chocolate Blueberry Flax/Almond Muffins

    Preheat oven to 350 F. Prepare two muffin tins with muffin papers.

    2 cups ground flax
    2 cups ground almonds
    1/2 cup unsweetened cocoa
    1 teaspoon guar gum
    1 tablespoon cinnamon
    1 teaspoon crushed instant coffee
    1 tablespoon baking powder
    1/4 cup powdered splenda
    3/4 cup melted butter
    5 large eggs
    1/4 cup whipping cream
    1 tablespoon real vanilla extract
    frozen blueberry juice plus water
    1 cup thawed frozen blueberries
    1/2 cup hulled hemp hearts (or whole flax seeds)

    Mix all dry ingrdients together. Make a well in the centre and add the
    melted butter. Mix thoroughly. whisk eggs, cream, vanilla and
    blueberry juice plus water together (you are looking for 2 cups liquid
    in total). Add to dry ingredients and mix thoroughly. Gently fold in
    blueberries. Gently fold in hemp hearts.

    Spoon into muffin papers. Bake for 40 minutes. Refriderate after cool.

    Total recipe count: Single muffin if 28 made:
