I'm so happy I can now eat pumpkin pie and make it in the microwave.
Others have probably done this but here goes.
Buy canned pumpkin. Beware of Pumpkin Pie Mix in the can. It's loaded
with sugar.
Follow recipe, but make these substitutions. Use sweetener instead of
sugar (obviously). Substitute Hood's Low carb dairy beverage for the
milk. Add a little whole cream to the mix. You could probably use a low
carb soy milk with a little whole cream.
Microwave a pie-deep level of the mix in a covered microwave dish at low
heat for about 20 minutes. I set my power setting at 40%. Check it every
so often. When you can insert a knife slightly off center and it comes
out clean, it's done.
For the crust, I make soy flour crumbles by mixing canola oil, soy
flour, cinnamon and Splenda in a non-stick pan, stirring with a wooden
spoon over a medium heat until I get crisp crumbles. Sprinkle these
over the cooked pie mix.
