looking for pan/bar cookie recipe

  1. Hi there:

    Over the weekend I had the best bar cookie I've ever tasted, and I'd
    love to find a recipe. They were called "ecstasy" bars. They had a
    thick layer of firm chocolate on top and the bottom had a gluey
    mixture of butter? Hint of Peanut butter? Rice krispies?. There was
    also a thin layer of something white between, creamy, not marshmallow.
    They were the best pan cookies I ever tasted. Does that sound
    familiar to anyone?

    Don't know if this is what you had but here is a recipe by that name.

    ECSTASY BARS
    1 cup flour
    1 cup rolled oats
    ½ tsp. baking soda
    pinch salt
    ½ cup butter
    ½ cup sugar
    ½ cup brown sugar
    1 egg

    ¾ cup peanut butter
    1 ¼ cups chocolate chips
    ½ cup powdered sugar
    3 Tbsp. evaporated milk

    Preheat oven to 350 degrees.

    Combine the flour, oats, baking soda and salt in a small bowl. Set
    aside.
    Cream the butter, sugar and brown sugar together until smooth. Add the
    egg, vanilla and ½ cup of the peanut butter and mix thoroughly. Fold
    the dry ingredients into the wet mixture. Mix until just combined.
    Spread the dough into a greased 9"x13"x2" pan. Bake for 20
    minutes until lightly golden brown.
    Remove the crust from the oven and, while it's still piping hot,
    sprinkle the chocolate chips over it. Spread them evenly across the
    dough as they melt.
    While the chocolate is melting, combine in a separate bowl the powdered
    sugar, peanut butter and evaporated milk. Beat together and spread onto
    the melted chocolate, forming a marbled pattern. Allow the bars to cool
    and then serve.

  3. Thanks, that's not it, but you're warm. The bottom part might be
    similar, but there was no oatmeal, just some rice krispies. Top was
    just chocolate, and thick, about a half an inch, sweeter than
    semi-sweet, but not as sweet as sweet chocolate.

    You might be describing a type of nanaimo bar. A nanaimo bar has a
    bottom crust, a cream type custardy filling, and a chocolate top.
    Maybe you can find what you're looking for by combining different
    recipes. Your best bet is to get the recipe directly from the source
    though. Where did you eat those bar cookies? Were they homemade? If
    so then can you ask the person who made them for the recipe?

    I think I have the recipe somewhere - here I come to save the day. ;-)
    I got this from one of my employers' wives last year: they are GOOD.

    Rice Krispie Supreme Bars

    1 c. brown sugar
    1 c. White Karo Syrup

    Cook over medium heat until sugar
    is dissolved. Do not bring to a boil.

    Add 2 cups peanut butter and beat
    until smooth. Pour over 5 cups of
    Rice Krispies. Pat this mixture in
    buttered jelly roll pan.

    Mix together:

    1 stick butter, softened
    1/3 c. milk
    ½ pkg. vanilla instant pudding (dry)
    4 cups powdered sugar

    Frost Rice Krispie mixture with this.

    Melt 1 ¾ c. chocolate chips with 1 c.
    peanut butter. Spread over above mixture.

    Chill and cut in bars.

    No it's definitely not a Nanaimo bar. I found these bar cookies at a
    small restaurant in southern British Columbia near Cranbrook. I don't
    know if they would give out the recipe...I haven't asked yet. I do
    agree that I may have to combine different recipes.

    There was not that custardy filling, just a very thin layer of
    something white in the middle, not yellow....top thick
    chocolate...bottom hint of peanut butter, butter, rice krispie goo.

    may be different, but I could always pick my own chocolate frosting.

    I think I have the recipe somewhere - here I come to save the day. ;-)
    I got this from one of my employers' wives last year: they are GOOD.

    Rice Krispie Supreme Bars

    No problem - I'm sure it is the same, except maybe the frosting. When
    I tasted them, I couldn't really taste the peanut butter in the
    frosting - but I, too, would probably make my own version.

    I'm pretty sure the pudding mix and powdered sugar made up the white
    layer in the ones you had.

    rich, sort of a cross between cookie bar and candy. They were about a
    1 1/2 inch square, and some were about 1 x 2".

  11. Yes, they were very rich and chewy. I wonder what the added instant
    pudding does for the middle layer? Also, you could be right...I guess
    it's possible that there was peanut butter in the top and I just
    couldn't taste it.

    **is** different than the one you requested, but it is along the same
    lines and is very tasty. I'm guessing it probably originated as a
    Karo syrup recipe or perhaps a Rice Krispies. Since I don't know, I
    gave it the title below :-)

    Wayne's Mother's BESTEST Cookies

    List of Ingredients

    1 cup sugar
    1 cup light corn syrup
    1 cup peanut butter
    6 cups Rice Krispies cereal
    1-6oz pkg chocolate chips
    1-6oz pkg butterscotch chips

    Recipe

    Combine sugar & syrup in a 3-qt saucepan. Cook over moderate heat
    until bubbles appear. Remove from heat and stir in peanut butter. Mix
    wel. Add 6 cups Rice Krispies. Stir FAST. Press into buttered 12x9x2"
    pan.

    Melt chips together. Combine well. Spread over top of cookies. Cool
    and cut into squares.

    My late ex-mother-in-law was one of the lovliest people I've ever
    known. She made these cookies every Christmas. I think of her fondly

    Chocolate Oh Henry Squares

    cookies, desserts, tested

    Whole graham crackers
    3/4 cup butter
    2/3 cup packed brown sugar
    1/2 cup whole milk
    1/3 cup semisweet chocolate chips
    1 1/4 cups graham cracker crumbs
    1 cup chopped walnuts
    -----Icing----
    1 1/4 cups icing sugar
    3 tablespoon Butter
    1/4 cup cocoa
    5 tsp strong hot coffee

    Line a 9 x 9 pan with whole crackers trimming to fit. Set aside

    Put butter, sugar and milk in saucepan. Bring to boil. Remove from heat
    and
    stir in chips, when chips have melted add the crumbs and nuts. Stir to
    mix.
    Pour over crackers in pan.

    Cover with whole crackers trimming to fit. Cool before frosting.

    NOTE: Trying to discover/re-produce what made the first batch so good.
    Possibly heat in a 350F oven 10 minutes covered (for best
    effect) .
    After top crackers are in place but before icing.

    Icing - Beat all together in small bowl adjusting liquid as needed.
    Spread
    over crackers. Cover and allow to stand a few hours so crackers soften.

    Pecan Pie Bars I

    bars/squares, recipe b, tested

    crust:
    3 cups all-purpose flour
    1/2 cup white sugar
    1/2 teaspoon salt
    1 cup margarine

    filling:
    4 eggs
    1 1/2 cups light corn syrup
    1 1/2 cups white sugar
    3 tablespoons margarine, melted
    1 1/2 teaspoons vanilla extract
    2 1/2 cups chopped pecans

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C).

    **IMPORTANT** Lightly grease a 10x15 inch jellyroll pan.

    2. In a large bowl, stir together the flour, 1/2 cup sugar, and salt. Cut
    in 1 cup of margarine until mixture
    resembles coarse crumbs. Sprinkle the mixture evenly over the prepared
    pan,
    and press in firmly.

    3. Bake for 20 minutes in the preheated oven.

    4. While the crust is baking, prepare the filling. In a large bowl mix
    together the eggs, corn syrup,
    1 1/2 cups sugar, 3 tablespoons margarine, and vanilla until smooth. Stir
    in the chopped pecans.
    Spread the filling evenly over the crust as soon as it comes out of the
    oven.

    5. Bake for 25 minutes in the preheated oven, or until set. Allow to cool
    completely on a wire rack before
    slicing into bars.

    For a better crust replace the white sugar with brown Sugar

    No huh! Yours have Kellogg's Special K, Wayne's mom's have Rice
    Krispies!!! Therefore, these are Wayne's Mom's Bestest Cookies and
    NOT anything else!

    (best memory from that time: Christmas-time, Wayne and I racing out
    of the car to get into the house, elbowing each other out of the way,
    trying to get to those cookies. I can remember his mother giggling,
    and giggling and giggling. She had a lovely little laugh :-) Too bad
    her son was such a j....... Well. Enough said about that!)
