Wow. Thanks for that education, I didn't know all that. I figured that
the instant stuff in US supermarkets was probably just an imitation, but
I had no idea it was so far removed from true ramen.

Nice site - and yes I have had most types of "real" ramen as well as Soba, Udon,
and most of the other varieties. My absolute favorite is
http://www.worldramen.net/Varietion/soba/sobapage.html Mori Soba & who can pass
up good Yaki-Soba.

I agree. Well, except that I don't like soba. I cooked some fresh soba last
week and reminded myself that I just don't like buckwheat. I wouldn't pass
up a bowl of Yaki-Soba though. Most Japanese foods don't appeal to me but
most noodle dishes do. All this said, I still like the cheap packaged ramen
noodles! I have a couple of cases of it in my pantry. Love the stuff!

Yes, those are really good in the summer.

My current favorite is ramen at a little noodle shop in NYC Chinatown.
It is supposed to be a Singapore style and the broth has a nice spicy kick.
