Escarole is commonly used. Spincah, curly endive and chicory are other
options.

Best? Any lettuce can be included in soup, which type of lettuce
depends on which kind of soup... for mild flavored soups (chicken)
romaine and iceberg are good... with hearty rich soups (beef) try
chickery and escarole. With seafood soups I like to use the Chinese
lettuces, many of which are mildly mustard flavored... goes great with
shellfish. The trick is to add the lettuce at the very end, timing
each one according to tenderness so it still has some texture and
doesn't disintergrate to mush... with some the lettuces can be torn
into rather large pieces and with others finely shredded works well...
I like finely shredded iceberg in potato soup. But as per usual it's
all about ones personal taste... experiment.

My garden greens failed utterly this year, so I picked over, blanched, and
froze all the bolted lettuce leaves as spring came to an end. That's nasty
stuff for eating straight - bitter and sappy - but it works great for the
greens in vegetable soup. Can't tell you best varieties - I was growing a
mesclun mix and just used everything.

Horrible summer for lettuce here too 🙁 I really miss my mesclun mix.
I've replanted in the hoptes the weather will cool down just a tad. The
seeds are sprouting so that's a good sign. I let my bolted lettuce go
to seed for the fall and next year. I didn't think to use lettuce in soups.

Sounds good -- bitter lettuces in soup.
I have rotten luck gardening, maybe I should try this. 🙂
