  1. because we are heading to the store for ingredients!!

I have a 10" springform pan, recipe calls for 9". Will my cheesecake come
out "wrong" or just flatter? Do you think I need to adjuct cooking time?

    ugh.

I used an 8" springform pan. I still divided it into 16 pieces.

I think it will be fine, though you may need to watch carefully toward the
end. And if you use Myra's recipe, remember that that sour cream topping
doesn't need to get hard or anything, so just leave it in the oven for that
    additional 5 minutes.

Most ovens vary somewhat in temp anyway, so to some degree you have to play
around. Personally, I like the cheesecake better raw, so I don't think it
will be too much of a problem if you don't leave it in long enough 🙂

  3. buy a new pan Bobbi

Much too fussy.... just throw it in and I have no doubt you'll eat the
entire thing however it turns out. Anyway you bake it, it's always better
the next day after it's refridgerated.

It's likely a good thing that you don't find it 'great' 🙂

Man I love reading about others eating home baked cheese cake.
Fortunately I have a carton of pineapple flavored Philadelphia Cream
Cheese that substitues for the cheese cake. 8 oz and I've been
sampling it for a week and its about half gone. It is so good and
just a tablespoon can make me feel like I've had a great dessert and
satisfying my cravings for sweets. There is something magic about
    cream cheese.
