    Don't overlook the carbon steel peasant's knife from Lee Valley, it's
    inexpensive and performs flawlessly. Every kitchen needs at least one
    carbon steel knife, no stainless steel can compete with the sharpness
    of carbon steel... nothing better for slicing raw meats or carving a
    roast.

    And Allied Kenco has an extensive array of cleavers, also very well
    priced.

    The Walnut Traditions have dark wood handles.
    They were decent knives in the past. Mine are circa 1980.

    Sheldon mentioned the carbon steel peasant's knife from Lee Valley.
    I bought a Chinese stainless steel cleaver from them,
    and it works for me.

    There are a lot of good knives these days, maybe too many options :-)

    Typically there's excellent quality carbon steel cutlery available for
    very little money at Salvation Army type stores.. people shy away
    because it's not shiny.
