Key lime pie storage time?

    without whipped cream.. it says "may be held/stored 24 hours"
    Why such a short period? Is 48 hours going to make someone sick?

    I think it depends on what recipe you used... when I made them they
    were good for a week (not that they ever lasted more than a few days,
    because they taste GOOD!) Looking at that recipe I don't see any
    reason why it shouldn't keep just as well... except maybe the crumb
    crust gets soggy.

    I include one tablespoon of key lime zest in the filling for extra zing and
    visual appeal.

    Update... They looked fine after 48 hours.. so I guess they're ok...
    Otherwise,, I've just made my Chief pilot, and local F.A.A. inspectors
    sick!

    Using that same recipe for filling and a store-bought graham cracker
    crust (and no topping--whipped cream or otherwise), I've once kept key
    lime pie refrigerated for as long as two weeks. (I pressed a round of
    wax paper on the surface to cover it) The quality had declined
    markedly, but it still tasted ok. It definitely lacked the intense
    flavor of a fresh key lime pie made with freshly squeezed key lime
    juice, but it tasted ok and didn't make anyone sick. I keep my fridge
    cold enough that there are spots in which things freeze. The pie I
    kept for so long wasnt in one of those spots, but my fridge is cold.
