    Halibut wth Cucumber Dill Sauce

    Serving Size : 4 Preparation Time :0:00

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 halibut fillets, ~6 oz each
    salt and pepper to taste
    Lemon Butter
    1/2 pound butter
    1/4 cup fresh lemon juice
    2 teaspoons lemon zest - minced
    Dill Sauce
    1 cup sour cream
    1/2 cup mayonnaise
    2 teaspoons fresh dill
    1/2 cup cucumbers, peeled, seeded and diced

    Preheat oven to 400°F. Make Lemon Butter: Melt butter in saucepan and
    slowly whisk in fresh lemon juice and zest to combine.

    Dill Sauce: Whip the sour cream until smooth and creamy to break up
    lumps. Add mayonnaise, dill, and diced cucumbers. Refrigerate until
    needed.

    Place halibut in baking dish and sprinkle with salt and pepper. Baste
    halibut with lemon butter. Bake for 8-10 minutes or until fish is done
    in center.

    Remove halibut from oven and ladle dill sauce over fish. Place under
    broiler until lightly golden brown, 1 to 1-1/2 minutes. Transfer
    halibut to a serving dish and garnish with cucumber slices.

    Yeppers! I couldn't remember how to spell it at the time, but I believe I
    use Pflbt or something similar.

    Yuk yuk. :-P Here I thought I was being so subtle. Kinda looks
    that way, doesn't it? Nah, I'm just trying to eat better - and that
    includes fishies. This halibut thing came in today's email from
    Kincaid's, a local bigshot restaurant. There was some mention of
    halibut in one of the threads and.. . . it seemed like a fit.
