Jalopeno Pepper Cheese

  1. I had a sample at an Amish cheese/meat stand. Oh boy was this stuff
    good! It was hot enough to bring tears to the eyes just with the smell
    yet went down smooth then it came back and slapped you in the butt,
    twirled you around, and slapped you again. Just way too good! Now
    curious minds wants to know if I buy some of this cheese what I could
    use it for. I'm in kind of a cooking rut but I just know this cheese
    would be good for something other than snacking. I'm thinking perhaps
    of using it to add a little kick to homemade mac and cheese but I know
    there has to be a better use for it.

    I would shred it and use it on enchiladas. I am on an enchilada kick...

    Quesadillas! Melt it between two flour tortillas.

    Wherever else you use an American or Monterrey Jack cheese.

    Grilled cheese sandwiches
    Mexican Torta Compuesta (combination sandwich on a roll)
    Use the cheese 1/2 & 1/2 with your favorite Mac & Cheese recipe.
    nothing wrong with Potatoes au gratin.

    And so on and so on and so on.......

    Ah yes. And there's nothing wrong with a little browned chorizo to add to
    the quesadillas along with the cheese 🙂 I'm rather fond of spinach &
    cheese quesadillas, too.

    Toast bread on one side, flip and butter the second side. Spread some pasta
    herb garlic sauce over, add chopped bacon rasher or salami type sausage,
    grate a layer of the cheese over but not too much, put back under the grill
    on medium until the cheese browns nicely - excellent twist to cheese on
    toast, or really fast pizza - this (more or less - I added herbs, garlic and
    mashed chiles to tom. puree and used 4 different kinds of cheese, but it's
    near enough) was the first thing I ever cooked for my wife, before we were
    married - a nice breakfast snack after she stayed over - told me I'd won her
    heart right there and then LOL!

    DH likes them with a little ground beef, onions, mushrooms, tomatoes,
    and cheddar cheese.
