Food sensativities don't really come and go but the intensity of
their symptoms can increase or decrease to the point it can
look like it. Suddenly? I can't address that part.
Consider the symptoms of my wheat intolerance. All my
life I'd had a cough like a smoker but I never used tobacco.
It just ran in the family, no one ever thought it might come from
food. But for a long time wheat didn't trigger binges for me.
That symptom build up during my 30s.
Thanks to Atkins I learned of my wheat intolerance. The
cough, the snoring, the digestion (which I never knew was
indigestion before that just normal) turned off like a light
switch near the end of Induction. A few months later my first
wheat turned several symptoms back on with just a tiny bit.
Several years worth of avoidance eventually went from strict
to non-strict so I started getting accidental dosages of wheat
from cream-of-whatever soup and such every couple of months.
The symptoms from these accidental exposures is a LOT
less than it was back when I started.

So you could try some sort of elimination plan on your own.
Don't skip any medical tests because those will be fast if you
have what they are testing for. Suspect eggs, go a week egg
free. Suspect dairy, go a week dairy free. Pick stuff you eat
a lot of regularly and do a week free of each. Can't hurt, might
work.
