For two people, I beat together four eggs with salt (kosher) and freshly ground black pepper. I heated up a non-stick pan, fairly hot. I added the eggs and stirred for a while (an Alton Brown trick). I took the eggs off the heat and finished them under the broiler. I spread on some of my girlfriend's bruschetta sauce and then sprinkled on crumbled Feta cheese. I finished this under the broiler. It was quite delicious. For my part of the omelet, I also added anchovies.
The broiler trick is nice because it cooks the half-cooked eggs and allows you to melt cheese/heat up stuff.
Drop small chunks of cream cheese (whipped cream cheese is especially good) on half the omelet, add the crab and then fold the other half on top. Folding get be a bit tricky. Make sure the eggs are cooked through.
If you don't want to fold, your broiler technique (or hot oven) works just as well. It only takes a few seconds to melt the cream cheese and heat up the crab.
They're really good, and as you discovered... easy.

I made an omelet (I didn't mix the stuff into the egg mixture; I finished the egg mixture in the broiler, then added toppings, then finished the toppings. I then folded the eggs over).
