instead of bacon?

  1. I tried a new recipe the other day. A nice stir fry with
    zucchini,onion, a tomato, cabbage, garlic, white beans , parmesan and
    bacon pieces. I would like to pass this recipe on to a vegetarian
    friend but what could I use in place of bacon? It gave this dish such a
    nice flavor.

    Around here, I can find some nice hickory-smoked seitan, which if
    fried up a bit to crisp it, can sometimes work in a situation like this.

    Bac-o's is a brand of bacon flavored textured soy protien; it provides a
    passable version of bacon flavor and crunch when used in some recipes.
    Eaten alone, Bac-o's are disgusting.

    Yea, it has a much denser texture and is slightly yellow. The Asian
    market we frequent has it.

    I'd go with this recipe leaving out the parmesan, then at the appropriate
    time (2-3 minutes before serving) add a little cornstarch with soy sauce and
    even a little chili garlic or chili sauce for an asian-type dish served with
    some plain rice.

    If you are wanting an Italian stir-fry, I'd use a mix of olive oil & butter
    to fry, and perhaps a little italian seasonings (or fresh basil, rosemary,
    etc.) Then at the end of the cooking, add a lot of parmesan, if the
    vegetarian friend eats dairy.

    Nothing. One of the major prices vegetarians have to pay is the loss
    of bacon. Nothing substitutes adequately. I know two people who
    periodically choose vegetarian diets for 6 to 18 months at a time.
    Both of them end their vegetarian phases by frying bacon. -aem

    I sometimes think about people like Orthodox Jews
    who live under dietary restrictions that prevent
    them from eating some of my favorite foods. I hope
    they're happy, but I would consider it a tragedy
    to live one's entire life and not know the joy of
    eating good bacon. Or chocolate, though I'm not
    aware of any religions that forbid chocolate.

    Beef bacon exists, and it does capture some of the
    texture of bacon when skillfully prepared, but it
    is not bacon. Fried smoked salmon skin comes closer
    in texture, and I quite like it, but it is not bacon.

    I once had very good Peking duck at a first-class
    Chinese restaurant. I'd like to have that again,
    sometime. (Unfortunately, the restaurant ceased to
    exist long ago.) It had a texture like bacon, but
    better in certain respects. And the flavor was
    exquisite. I'll remember that duck for the rest of
    my life.

    What vegetarian substitute is there for bacon?
    Nothing. Absolutely nothing. Deep fried noodles
    would provide crunch, but any attempt to duplicate
    bacon with vegetarian materials wastes your time
    and annoys the soybeans.

    When trying to simply eat low fat, I found soy "bacon" to be pretty
    tasty. ;-d

  12. One suggestion to add to the Stir Fry, might be Rehydrated Chinese Black
    Mushrooms, or Portobello Mushrooms. Both have sort of a "Meaty" flavor
    to them. Mark

    A priest and a rabbi found themselves sharing a compartment on a train.
    After a while, the priest put down his book and opened a conversation by
    saying, "I know that, in your religion, you're not supposed to eat
    pork... but have you really never even tasted it?"

    The rabbi closed his newspaper and responded, "I must tell you the truth.
    Yes I have, on the odd occasion."

    The rabbi had his turn of interrogation. He asked, "I know that in your
    religion, you're supposed to be celibate... but..."

    The priest interjected, "Yes, I know what you are going to ask, and yes,
    I have succumbed to temptation once or twice."

    The two resumed their reading. There was silence for a while.

    Then the rabbi peeked around his newspaper with a smile and said, "Better
    than pork, isn't it!"

    I am not a vegetarian, but I prefer dishes not made with pork or beef
    products. Chicken and fish are OK, but certainly not necessary for my eating
    satisfaction. I would eat even less of chicken or fish if it weren't for DH.
    This is not a head-choice for me, it is just the way I am. Just like my DH
    could live on meat, bread and potatoes; that's the way he is. Funny how
    people react to certain foods, but bacon is one of those that I could live a
    lifetime without. Show me some bacon-bits in a jar and I wanna upchuck. I
    do keep bacon on-hand recently, to placate DH and to use if I don't have
    pancetta, but that's seldom.

    Quite a few of the Hare Krishna folks I know refuse to eat chocolate,
    but I'm pretty sure it's not a strict prohibition.
