I always use left-over cooked pork in fried rice! I can't imagine using fresh. You just throw it in at the end. I have some smoked pulled pork that's "musgovian" I'm going to use up today for this very thing.

Oooooh, egg foo yung! That's an excellent idea! I haven't made that in a couple of years; I think I'm due. I have pulled pork leftovers; instead of fried rice, I may do egg foo yung. I even have sherry for the sauce. All I need are bean sprouts, but I have to make a store run anyway. Good call, Bob.

Bamboo shoots would be okay with the pork, but I don't think that canned mushrooms or teriyaki would go very well.
Rather than the suggested fried rice, I'd consider making some kind of stuffed-dough thing with the pork.

Heh, Jill could if she had egg roll wrappers or wonton wrappers, which she doesn't! I think I'll try to make some homemade "Hot Pockets" using the pork. I'm not in the mood for stir fry, fried rice or noodles at this point.

You cannot help using leftover BBQ pork in fried rice. Remember, it is cooked - BBQed - first, and unless you are lucky enough to be at a restaurant that makes their own, it is always a leftover.
Now I am thinking about wandering around Chinatown in Toronto and looking at all the BBQ pork and ducks hanging in the windows. Saliva glands, do your thing!
