I'm on low carbs because

  1. Hi Folks,
    I'm on low carbs because I'm diabetic. It has done wonders for my blood
    glucose numbers. I am super careful but I do eat a small amount of
    vegetables like broccoli, green beans, spinach occasionally. They are
    complex carbs though and I measure them carefully. I do not need to
    lose weight as I am only 111 lbs. but If I gained any weight, the
    veggies would be the first to go!! I've been eating low carb for about
    15 years, and I love it. The things I won't touch are breads and
    starches of any kind. It took awhile to learn to get used to that (but
    now its an ingrained habit, because of this dreadful disease I suffer
    from) I don't need to lose my vision or have a foot amputated, because
    I cheated.
    I even have to be careful (very careful) of fruits. Only measured
    amounts like 1/4 of an apple as a snack in the afternoon. No bananas
    ever. Occasionally a few strawberries or raspberries and never in the
    mornings when glucose levels tend to be high for me. Fruit juice is
    also verbotin!

  2. 15 years is a wonderfully long time.

    Have you had any trouble with potassium levels?

    Were you ever overweight, or did you start low carb due to the diabetes?

    I'm a type 2. Low carb has made my HbA1c look normal.

    Many low carbers go back to carbs at some point, despite the consequences.
    Do you have any advice about how you beat the odds and stuck with it?

    Diabetics can't eat as much as they want of any food. Doesn't matter if
    it's broccoli. If you eat too much of anything, it can cause a spike in
    blood sugar.

    Although, I do find the wording above about eating a "small amount" of those
    veggies "occasionally". It doesn't sound like healthy eating by anyone's
    standards. Even Dr. Bernstein suggests more veggies than that - but by a
    measured amount that does not vary.

    a spike and they are all from the diabetic free food list.

    I'm a type 2 diabetic, and I can fill my tummy full of broccoli, green
    beans, and/or spinach and not notice a blip on my meter.

    Just one point. Complex carbs. The term refers to starches.
    Multi-molecular carbohydrate structures. As opposed to simple carbs
    which are single molecule carbohydrate structures. Sugars are simple,
    starches are complex.

    These terms are not descriptive of fruits or vegetables. The best
    description for fruits and vegetables may be whole food or unrefined
    carbohydrates, or even low-GI. But the terms complex or simple refers
    to the molecular make-up of the carbs like sugars and starches.

  8. Even these I have to measure! If I have more than say, 1/2 cup, my
    sugar goes up. Particularly with spinach which I really love, so, I
    eat less of that. Green beans seem to be the easiest for me to
    tolerate, but I can't seem to eat all I want, even though you say I
    can!
    The latest thing I've added to my diet is chana dal, a dried indian
    legume which I find amazing because it is so low glycemic, and yet so
    deliciously starchy. I found the link on alt.support diabetes. I
    believe the site was mendoza.com. very interesting. It is fun to eat,
    and can be seasoned quite highly without concern, and is extremely
    tasty. It's so nice to have something that good be safe to eat for us
    diabetics!

    chana dal - i think 'dal' means lentils?? i didn't know about them
    until i went to eat at an indian restaurant with some vegetarian
    friends. i have no idea that they're low glycemic, that's definitely an
    interesting piece of info!
