My butcher has gotten buffalo cuts in FINALLY. Been over a month. Same with whole foods, not a store had any!
I can never find any. I can, however, buy bison all over the place. Buffalo, is water buffalo. From Asia.

Bison has been referred to as buffalo forever in TX and in the west. Whole Foods has buffalo/bison that comes from the Denver area and it is labeled as buffalo on the box it comes in and on the individual package.

Carmen Creek, a frozen buffalo burg supplier for Whole Foods underwent a system change. Instead of fresh shaped burgers in 3-burger x 2 stacks cryopacks, they now fast freeze each burger separately with the typical paper separator in a non cryovack 3-burger x 2 stack bag. Doesn't resemble the original product and some flavor is lost. I'll do more business with my butcher for the fresh ground meat packs and press my own burgs.

Whole foods in Austin has it fresh. It is good stuff. sWertz is correct that water buffalo is "buffalo" the other critter we commonly refer to as buffalo is bison. WF has buffalo/bison NY strips, rib eyes, ground and I think they also have tenderloin. Here in the hill country of Texas no one will be ordering up water buffalo..if they do they will get bison. I'm well aware what is common usage, but there are drastic differences (tastewise and phisiologically) between the American buffalo - Bison, and real buffalo from Asia).
Cod, Red, Snapper, Sea Bass, Lobster... Are all just vague terms used to pass off inferior and less-expensive products because of naming confusions.

If you go to a crappy HEB like the one at the Y in Oak Hill the prices are less than if you go to the Escarpment HEB for the exact same item. HEB profits must be off the charts..farther off the charts than Exxon. In fact I think Exxon owns HEB. They are raising prices daily. I am adding them to the HATE list. I am headed to look in the phone book to see if we have a Piggly Wiggly. ~(:-|

I was trying to explain this to someone in austin.general yesterday. He used to work there and insists the prices are the same at all HEB's.
I find the Slaughter HEB is a OK balance between the Third-World HEB's (Congress, Rundberg, or First Streets) and the upscale HEB's (Escarpment, 2222, Parmer/I35).

Actually the bison (No. American bovid) is also a buffalo in that it's simply a different genus of bovid.

Try some at home. I have cooked it many times and in different dishes and it has always been good. The pre ground stuff.. who knows what they put in it.. but we have available many fresh cuts and it is good stuff. Perhaps it is not worth the $$ but sometimes we splurge.
