  1. I get grief for not liking...
    mushrooms
    bell pepper
    onions
    olives

    though I will cook and eat bell pepper and onion on occasion if necessary and
    I will cook and use all of them for other people. I will not eat mushrooms or
    olives for love or money.

    What seemingly normal food do you dislike?

    cooked or raw or both?
    I had my first raw oysters in key west in april and i thought they were just
    okay, but my friend alex was disappointed, he said they were some big kind
    meant to impress us with the size, but they didn't have much flavor. I want to
    say they were Texas something or other. Either way, enough horseradish and
    lemon and tabasco gave them some flavor.

    The only two things I will not eat are lima beans and salmon mousse. I
    will tolerate limas if they are cooked in a stew to a point which they
    are no longer reminiscent of their true nature. I won't eat salmon
    mousse because the first time my mother made it, she used sweetened
    agar-agar 'gelatin' and it was so gross I threw up shortly after eating
    it. It took a long time before I could eat salmon at all after that, and
    I have tried salmon mousse since then, and although it was prepared
    well, I couldnt manage more than a bite.

    I don't care for fast food, either, but that's more of a
    greasy/salty/sugary thing. I have a hard time eating any processed foods
    because they always taste too salty and sugary compared to what I cook
    from scratch.

    You can send all your mushrooms and olives to me, Heather. I'll mix 'em
    with the tomatoes my husband discards and make a salad 🙂

    there are a lot of processed foods I can't eat because they taste all
    chemically, but there are some I can't give up, like Skippy peanut butter.

    Cypress Grove Farms!
    They make some of the best large production goat cheeses in the US. I really
    have this sick love of goat and sheep cheeses. There's a queso de cabra some
    spain, semi-firm, tangy, goes beautifully with stone fruits, especially
    apricots.

    Mushrooms, raisins, all store bought fish.... was spoiled as a child.... my
    dad was a huge fisherman and we ate fresh fish all the time. Can't even
    walk past the fish case at the grocery store the smell is so noxious!

    Please, don't cut me off yet. I am operating under the assumption that you
    are correct and I just haven't met the right goat cheese yet, so I continue
    to try. Many, many years ago I sought out a goat farm and did make some
    cheese from goat milk, but it wasn't like the currently popular goat cheese.
    Since you like goat cheese, tell me, is the flavor 'musty?' Or is that a
    particular style or what? Tell me some more about goat cheeses. Does it
    have an optimum ripe stage, or come in various ages?

    I love goat cheese, but some sheep's milk cheeses are a bit too..I don;t
    know, "woolen" tasting to me 🙂. There is this sheep's milk yogurt that
    I like a lot though, I forget the name of the company, but it comes in a
    green container. I was on an oatmeal with yogurt and bananas kick all
    last winter, and I tried many different kinds of yogurt. Seven starts
    farm full fat maple is still my favorite, though. (see what you started?
    I could go on for days about dairy products :> )

    dad was a huge fisherman and we ate fresh fish all the time. Can't even
    walk past the fish case at the grocery store the smell is so noxious!

    I don't eat much fish, because my husband really hates even the smell of
    it, but on occasion, he'll eat swordfish or shark, and he loves shrimp.
    He went with me once to the fish market, and he was shocked at how less
    of fish it smelled like that the fish counter at the supermarket 🙂

    I'll take your raisins, Lynne. I like to plump them in apple cider
    vinegar and make broccoli salad with mayo and onions 🙂

    I find that it is more often sheeps milk cheeses that have that musty
    odor/taste. Good fresh goat cheese should be tangy, kind of like cream
    cheese, but less creamy and more crumbly. Aged goat cheeses sometimes do
    have that "musty" flavor, but to some of us it is an aqcuired taste (I'm
    thinking of this goats milk cheese soaked in wine right now... but I
    cant think of the name right now 🙂 ) I prefer fresh goat cheese to
    ripened varieties, FWIW.

    Musty seems wrong, it's not a flavor I would associate with it. Tangy is a
    good flavor to shoot for, it should have a warm, developed underflavor,
    something akin to say the undertone of a good cream cheese (but stronger, more
    developed). There should be bright upper notes, a tangy-ness, especially when
    you breathe out while you are tasting. It's definitely not a 'round' sort of
    flavor like you would get from a milder cow's milk cheese, it's more linear,
    it runs right across the top of your palate (have I confused you yet?).

    I would highly recommend the Cypress Grove chevres to start with, they are
    fairly consistent and good. Get a plain one, put it on some warm toast and let
    it get a bit melty and soft.

    The king of goat cheeses is the Humboldt Fog, any good cheese monger knows it.
    get a wedge of this and make sure it's been aged, a young humboldt is just a
    chevre. As humboldt ages it goo-i-fies from the outside in, the center will be
    the texture of a regular chevre but the outer layer will be softer, almost
    scoopable. This is goat cheese heaven for me (until we get to mountain raised
    goats from spain, but that's a whole different game). Humboldt Fog has a
    distinctive grey line that runs through it, that's a layer of ash, don't even
    worry, you won't notice it. You can match the Humboldt or chevre with just
    about any fruit, grapes, pears, apricots, but nothing too sweet or you'll
    overwhelm it. Just get some good crusty bread, a french or even a fruited
    wheat is good. Typically, if I am doing a cheese tasting or a cheese plate I
    don't use sourdough, it's too competetive and distracting.

    Truth be told, for as much as I love goat cheese (and I do dearly love the
    goat cheeses) I can't drink goat milk. Part of it is just that all milk tastes
    gross to me, and part of it is that funked up goat smell. Reminds me of every
    boy i dated in high school.
