    We buy our eggs 5 dozen or 15 dozen at a time, depending on which store we
    buy them from. We have scrambled eggs, omelettes, deviled eggs, you name
    it. Eggs are nutritious and inexpensive.

    Almost all of the cholesterol that you eat is broken down into more
    basic chemistry during digestion, and the great majority of cholesterol
    in your body is generated from enzymes and chemistry processes in your
    own liver.

    This wasn't understood when the "EAT NO CHOLESTEROL" mantra was created
    over a generation ago.

    This isn't your father's cholesterol (Oldsmobile).

    The AMA took down their 1.5 eggs a week recommendation years ago.
    Their websites says something to the effect of 'we no longer recommend
    a specific limit on eggs'. This is either due to financial/political
    pressure from egg producers (95% chance) or because more studies
    showed a weaker and weaker link between cholesterol consumption and
    the link to heart disease.

    Your body manufacturers most of the cholesterol in your blood because
    it is vital to life. Until I read up on low carb I assumed that it was
    just a toxin/by-product of bad food. I had no idea it serves a vital
    funciton in the body or that the body manufacturers more than we ever
    consume.

    did a dozen say every 7-10 days. Now I rarely eat breakfast and 12
    eggs last 3-5 weeks. You naturally get tired of eating the same things
    so these foods should be self limiting unless you are used to
    robotically eating the same menu day-in-day-out.

    Thanks all........I couldn't believe that my family went through 3 dozen
    eggs in only 4 days!......now I don't feel so bad after reading everyone's
    posts......

    Walmart has them in 5 dozen boxes, and Sam's Club has them in 15 dozen
    boxes. I don't know if it's less expensive to buy them in bulk, but it's
    much more efficient. <G>

    I'm not really sure what you mean by needing more time. You're too busy to
    make them, or you don't know how? If it's the latter, I'd be happy to

    I've been eating it over the last 3 weeks, too. Not CONSTANTLY, but at least a
    couple of times a week -- I LOVE it! I add protein powder to it and don't fold
    it over, so it's more like a frosted pancake. It's low-carb, low-cal, tasty and
    nutritious. Works for ME!

    I frost it when I double the recipe. A very thick pancake. Just the right
    number of carbs for a lunch or dinner for me.

    Deviled eggs are something I've wanted to try to make, but haven't yet. I

    Be inventive with them. This of the egg yolk centers like an omelette
    or quiche center...

    mexican style - jalapenos, salsa, cheedar
    breakfast style - western omelet, crumbled bacon, tarragon,
    hollandaise; I like a little bit of horseradish & tarragon
    add in finely diced, peppers, zucchini, tomato, chiles, ham, salami,
    pepperoni, onion, sausage, any variety of cheese...

    You can vary them in a lot of ways and it is easy to try a different
    recipe for just 2 eggs each. Half dozen eggs can make 3 variations
    easy to do. I've even experimented with using sour cream and cream
    cheese instead of mayo. The trick is finding interesting combos for
    your taste buds.

    Do the arithmatic. Quota during Induction is 20 at least half
    from veggies. That leaves 10 or less from all other sources.
    Eggs run about 0.6 each. If you have no coffee or dairy or
    any other incidentals that's 10/0.6 eggs or 16 per day.

    But you can't realistically eat nothing but meat, eggs and
    water. Especially if you have your quota of dairy that's
    about 4 grams and other incidentals a few more. Realistically
    around 4 per day are plenty.
