How Do You Keep Jicama From Getting Slimy?

  1. I love jicama, especially mixed with coleslaw and even in breakfast cereal
    (tastes a lot like apples). But I can't eat it fast enough to keep it from
    getting slimy once I've diced it up.
    Any advice?

  2. Sorry, I meant that it gets slimy after it's diced up and stored in the
    fridge, not in my coleslaw or cereal. :-)

  3. Only cut off what you want to use that day.

    Don't pre-dice.

    Wrap the rest in plastic wrap with the wrap tightly touching the cut edge.

    Don't dice it up. Cut only what you think you will need, wrap the rest
    in paper towel and Gladwrap.

  7. I've kept jicama for way more than a week.

    Make sure you're buying good fresh jicama to start with.

    It should be smooth... firm and not have any soft spots.

    I have a large jicama in the fridge that's about 3 weeks old. The cut
    edge will have to be trimmed when I want to use more, but otherwise
    it's good as the day I bought it.
