I like very much "Octopus". I eat it in salad or i make a tomato sauce for
seasoning spaghetti. Today I've found in supermarket a fresh one. I also buy
mussels.
Tomorrow I will eat Spaghetti with Octopus sauce (with a lot of hot chili
pepper inside) and mussels "au gratin" (with some tomato sauce, breadcrumbs
and lot of parseley)

over pasta or rice.It's also excellent raw, all by itself with a bit of soy sauce and
wasabi. ;-) Sashimi style......

My favorite version of octopus is to poach small pieces a short time in
broth, then drain. Mix with some chopped onion, and garlic of course,
some capers, parsley, good olive oil, and some lemon juice. This is for
an appetizer. I like to use calamari for pasta sauce and ciuppin. How
do you keep octopus from getting too chewy, Pandora?

I've never had this problem. If I have to make a salad, I cut Octopus in
pieces, then I boil it and I let it cool in the same water. You must put
salt at the end (about 15 minutes before it's ready) because salt make the
mollusk hard when boiled. When cool I take away the skin and I season it
with lemon, oil , pepper , parsley and garlic.
If I have to make a tomato sauce, I generally use pressure cooking (you save
time and Octopus come out very tender in only 20 minutes): I put pieces of
octopus in the pan, with oil and garlic; mix for 2 minutes then evaporate
with white wine. Then I put some fresh tomato sauce, salt and pepper; I
close the pan and wait about 20 minutes for a big Octopus.

you need to clean it, I think it's going to stay in my freezer. I like the
taste of octopus, but have never prepared it myself. I now know why. What
