Without knowing their exact recipe, hard to say. Doing it with the
eggs, sausage, bacon, and cheese wouldn't be difficult at all. There
would have to be some measuring of the vegetables used to keep it to
that total.

Eggs, sausage, bacon, green peppers, mushrooms, onions, and tomatoes are
supposed to have virtually no carbs!
Tomatoes, green peppers, and onions definitely have some carbs. So do
many of the other ingredients, to a lesser extent. A fair amount of
the carb count is likely coming from the tomatoes if they are using
them diced in the omelette and also serving slices. Just a guess.
