    Flat cut. The more expensive cut. Natch.

    Thin cut is more expensive and less fatty. Thick cut is just
    the opposite but i think it has a better taste. I will
    usually cook them both.

    Keep in mind, both shrink quite a bit.

    Here, you can get flat cut or point cut. I understand the
    point cut is fatter/more gristly/whatever. Since it's half
    the price per pound, I am sure that is true.
