  1. I discovered a few weeks ago, that after 40+ years of being a
milk chocolate fan, I now love Hershey's Special Dark. It's got
the good parts of chocolate with fewer calories and sugar. Yay!
But here's the funny thing, to me anyway:

We made some chocolate chip cookies last week, and I nibbled the
chips (Hershey's Mini Chips) before the baking. Is it just me, or
are they the same exact thing as Special Dark? Not important,
no -- but it would be nice to know that I could chop up a Special
Dark bar in a baking emergency and have it taste the same...

I think they are the same. They sure taste the same. I love dark
chocolate, it will spoil you for milk chocolate.

I gave out Hershey's mini's for halloween, among other things, and had just
one left over, so I ate it the next day. It was dark chocolate and I have
to agree with you - I always thought I disliked dark chocolate, but I liked
this one. Too bad there was only one.

OK; now, wait for it, wait for it - time for Bobo Bonomo to chime in with
    "that's [censored]...that's [censored]..."

Now you folks that are just really discovering dark chocolate, go and
get some really good dark chocolate, like Valhrona, or Lindt, or
Callebut. You will be totally amazed. And if you can find it, get
    some with 70% cocoa.

I forget the brand (at Trader Joe's). Several grades. I buy the 85% cocoa
dark chocolate. Comes in a black wrapper with a "gold" foil inside.

It breaks into 8 squares so I have one a day and two on Sunday, every other
    week usually.

My days are numbered for this favorite treat thanks to the evil demon
    diabetes.

I started buying the miniatures in bulk at my local Top Foods. I take
them to work and keep the candy dish on my desk filled. People like to
congregate by my desk. I wonder why? ;-)

I've had the Lindt dark chocolate truffle balls before -- they're just
    Heavenly!

Those chocolates are *not* for recent converts, however much you and
    Chris like them.

Sometimes the texture can be different as well. You get up to the
higher percentages and it gets grainier occasionally...

Bitter could be a descriptive, but it's not bitter like Angostura.
It's not something recent converts from milk chocolate would
appreciate. I've eaten the Trader Joe's dark and think it's better
for baking. I am a long time dark chocolate eater, yet I don't like
it that deep. I know people who like it. I'm not one of them.

    🙂

I don't find it grainy. But one thing is for sure, it is rich and finishing
off a single square of it is so satisfying, as if you ate two regular
    chocolate bars.

    My brand is Valrhona http://www.tinyurl.com/3bmq2p

I don't know the origin of the cocoa.

I did start off with the 70% cocoa dark chocolate and worked my way up to
my 85% habit over about a year.

Evil, evil dark chocolate and SO good for you!!! 🙂

    Imho,

Lindt also has 85% and 99% chocolate bars. The 99% is wonderful, but
only in tiny tastes and takes some getting used to.

The 85% is very good, especially when you want to make something
intensely chocolaty. I hope that there is such a word.
