Henckles knife question

All the Professional "S"'s are the same, and are near the top of
the line. They should all have the Twin-Stick Figure logo on
them. The first one you mentioned is probably the 4-Star line -
same as the "S"'s just a different handle design, I believe. I
have some of both.

Did you check the manufacturer's web site? I'm wondering if you might find
that 31021... number there, which might tell you what the current equivalent
model is. Or, email them to narrow down the search.

I thought you were trying to describe two different knives. But
yes - the Professional "S" series will all be the same. That
line has been around for at least 8 years, as that's when I
bought mine.

Thanks. Yes, the above wording was all printed on one knife.

The only thing I couldn't figure out was the two-by-five rectangular
graphic; this has different arrangements of black squares, even
on otherwise identical knives. So I am ignoring this.

We ended up getting the 3-knife set (4", 6" and 8"😉.

I don't know what the grid signifies. That's a good question
though. On my 8" Wide Blade "S" Chef's knife, the black is in
the upper right. I also have a few of the Four Star that has the
graphic as well.
