Costco had 2 beautiful 1 1/2" rib chops yesterday and on impulse I bought a
package. Now I'm wondering how in the world to fix them. The only veal I've
ever worked with before have been cutlets that I've used for scaloppini, etc.
I'm remembering a wonderful veal rib chop I had at the CIA in Napa that was
served medium/rare with a lovely mushroom sauce and risotto accompaniment but
that's my only experience with veal rib chops. Anybody got a tried and true
method/recipe? I'd sure appreciate any help! Please, no comments about the
politically incorrectness of buying veal!

GigiGrill or pan fry just as a steak. If you pan fry - don't forget to deglaze
the pan.Dimitri

chops was in a restaurant where they served them that way. They were incredible.

Yikes, I'm just seeing this post for the first time and it's about
2 weeks old. I marinate veal chops in a mixture of olive oil,
lemon juice and sage, then grill to medium rare.
