    My wife insists on dumping potatoes that have begun to sprout shoots on the
    grounds they are poisonous.
    I disagree.
    Who is right?

  2. When I was growing up I was always told the same thing! Used 'em many
    times though and ain't dead yet. Wonder how that got started?

    Well, I've cut sprouts off my potatoes and eaten
    them without harm. Hasn't seemed to hurt me yet?

    Why do potatoes grow sprouts?
    When potatoes are in temperatures that are too warm they begin to develop
    sprouts. This means that the potato is trying to grow. Remember to cut away
    the sprouts before eating the potato. Storing the potatoes in a cool, dry,
    and dark location will help prevent this.

    Well, I've cut sprouts off my potatoes and eaten
    them without harm. Hasn't seemed to hurt me yet?

    Yeah, just take the eyes out with a paring knife, as you would if they
    hadn't sprouted yet. Potatoes that have turned green need to have their
    green cut out. That stuff can be toxic.

    You are. Cut them out and discard, mostly because they taste bad.

    BUT...

    Potatoes that are green because they've been exposed to light are
    happily developing a toxic condiment for your next meal. Peel them and
    it'll be ok, but don't eat much green potato skin.

    She is right about there being a toxin in the eyes. The substance solanine is
    found throughout potatoes it is in much heavier concentrations in the green
    skins and eyes. Don't eat potatoes that are rotten or green under the skin, and
    throw away the eyes.

    I read that storing potatoes with a few apples prevent them sprouting.
