Baked Pierogies & Scrambled Eggs
1/2 med-lg onion 25
1 pat butter 100
~ 3 Pierogies 150 (cal content varies by brand)
2 medium eggs 150

Thinly slice onion, place in uWaveable bowl, cut pat of butter
into about 4 pieces and scatter over top. Cover and nuke for
about 2 minutes until onions soften.
Cut thawed pierogies into thirds or quarters, place on lid of bowl
after onions are out (set aside) and nuke pierogie pieces for
about 90 seconds, while preheating toaster oven to max bake temp.
Place pierogie pieces on oven tray (scattered) and top with onion
slices and butter, leaving some butter in the bowl for later. Top
with favorite spices ( I use a mix of garlic powder, onion powder,
and red pepper) bake until pierogies start to brown.
As pierogies near done, scramble 2 eggs in buttery uWave bowl,
nuke for a couple minutes if you like your eggs cooked to death,
or do them for a minute and then a few seconds at a time until
you reach your favorite level of looseness (mine are about 1:10)
High protien, relatively low in fat (no sausage, bacon, ton-o-
butter, etc.) and a bit of the starches and veggie food groups
represented as well. Cholesterol be damned!, this makes for a
tasty, filling breakfast.
