I really love olive oil and use it frequently, but some

I like grilled cheese w/ OO much better than butter. What
part don't you 'get'? My DH like's his griled cheese to be
sopped in butter and then grilled (i find this gross) For me
a light brush of OO does the trick. Depending on the bread,
I may add a bit of salt.

Absolutely agree. Unless it's Italian bread with shreds of
asiago finished with chopped tomato, salt, pepper and
fresh basil.
But back across the Atlantic, the archetypal, overdone, gilded-
lily, over-the-top grilled cheese sandwich goes like this.
3 slices of bread (they don't all have to be the same kind
of bread) buttered on one side. Put them, butter side down,
in a medium-hot skillet. Quickly put cheese on each. They
must be cheddar, Jarlsberg and crumbled blue cheese,
respectively. Simultaneously with one of your other hands,
put down three slices of ripe, succulent tomato on some
other part of the skillet. With the remaining hand, put a
slice of ham (your choice) in the skillet. When the breads
are nicely browned, pick up the blue cheese one and put it
on a plate. Put the tomatoes on top and give it a quick
grind of pepper. Put another slice of the grilled and
cheesed bread (this time it doesn't matter for reasons that
will be obvious) on top and lay the ham slice on - dab of
horseradish mustard. Close by putting the remaining slice of
bread, cheese side down, on top of the stack. Cut into
quarters from corner to corner and stand them up, crust side
down on the plate. Like a little cheese-filled mountain
range. Run and hide before anyone knows what you've done and
wants some.

Interesting. I like soaked in butter, but haven't tried OO,
so I'll try that next time.
For me, though, grilled cheese must have extra sharp
cheddar and horseradish. For some reason, to me, they're
perfect together.

really like the whole concept of what you were rambling on
about, kind of a grilled cheese club sandwich. That has
really great potential. Putting tomatoes in the second layer
is a great idea because they'd just slide off the melted
cheese of the main layer. Excellent idea! 🙂

Granny Smith apples with a very light touch of stone
ground mustard.

The classic grilled cheese is made with a bit of mustard on
the inside. I like spicy mustards like Grey Poupon or
Chinese mustards or a mustard with horseradish. I'll try it
with straight horseradish next time. And yes, the extra
sharp is a given.

Miracle Whip (or Miracle Slop, as I like to call it) is my
condiment of choice for cheeseburgers. A local California
chain, Nations Giant Burgers, uses it along with a very
slight dab of mustard, and they use extra-thick slabs of
"good" American cheese (seems to be a bit more hearty than
the thin slices I get in the store).

While the sandwich you describe is certainly tasty, IMHO a
"clssic grilled cheese" is made with butter, bread, and
American cheese, nothing more. I'm sure there are thousands
of variations.
