So, I had this idea. Grind dehydrated peppers, and sprinkle the powder on
things where you want the flavor, but not the slimy texture. I have some
Penzey's dried peppers on hand. When I've had a chance to try this, I'll
report back.
Has anyone attempted this? How were the results?

How you talk ! Properly prepared bell pepper strips are not slimy !
The local stores have thinly sliced green, red and yellow pepper strips
in the frozen food section. My freezer usually holds three 16 oz bags
because a) they are so massively useful and b) they can be blanched,
saute'd, sweated or roasted in seconds. I also have Penzey's dried
red 'n green peppers on the condiment shelf, but tend to use them in
soups and stocks.
OTOH, once I tried Penzey's Bay Leaf Powder I have seen the light ! No
more fishing for the bay leaf in the beef stew or marinara for me :-)
