I am going to make (for myself only) LC Spanikopita by leaving out the
phillo :o( and cooking the ingredients in the cups of a muffin tin
to make them like little mini-quiche style. Whatdya think? I'll make
real spanikopita for the gang.
I will also wrap feta cheese w/grape leaves and fry them up a bit.
I will cry as I turn away the kouropiedes and baklava. No - I'll be
strong....
My mom made me meat-only koupepia (that's Cypriot) that were good,
maybe she'll do it again. No dolmades for me I guess.
Well, I have to make it through American Easter first...that's pretty
soon - I am going to 2 big family Easter celebrations/meals in a row.
Sat & Sun.
Is tiramosalata low carb? I have to figure out if my baba ghanouj is
too.
Hi Nanner,
Your spanakopita sounds like a good idea, I ought to try that. Thanks.
My weaknesses this easter will be me pining for the koulourakia and
tsoureki. Tsoureki is my favourite to have toasted with a bit of butter,
some feta and a cup of coffee for Easter breakfast.
My aunt also makes wicked tiropites and arnopita. Those too will be
difficult to resist. In all likelihood I will indulge a bit.
Of course I'll have lots of bbq'ed lamb, tsatziki and break a few eggs.
As for Taramosalata, it's not low carb if you put the bread crumbs or potato
in it. I guess if you could make do without putting too much in, then it
may be ok.
Monica 🙂
