Consider blanching the spinach then squeezing the water out of it, the tomatoes can be sliced in half and then squeezed to remove excess water and then chopped or sliced.
My favorite is just a bit of ham and aged cheddar mixed with the eggs. A pinch of garlic and oregano dont hurt. --- JL

Yep, it's wonderful what you can do with an omelette. Sometimes, when I'm really hungry for a meal, I put some chili inside and fold it over, and add whatever cheese needs using up. Good, quick little supper, with a few green salad type things on the side. Nancree

Cut the tomatoes in half around the equator and take out all the seeds and then chop. It's the seedy stuff that is wet. My favorite dinner omelet is crisp diced bacon, shredded cheddar, chopped green onions and diced, seeded tomatoes. If an avocado is available, that gets sliced and put in as well.
