The frozen one pound bag of "just chicken strips" at Trader Joe's. It's already cooked.
Handful of the frozen chicken strips, cup of frozen vegetables and about two tablespoons of tomato sauce (I use regular, I just count the carbs) in a tupperware type container, and I've got my lunch to take with me (wherever there's a microwave). I was making salads, but when I have a long day ahead, salads usually aren't quite very tasty by the time I eat them.

salad tip - don't put dressing on it till you eat it. DH takes one almost everyday and puts it in the fridge at work. He has romaine with George Forman'd chicken breast cut up. he uses bottled caeser dressing. it has sugar listed but less than 1g per serving and had no effect on his weight loss.
I buy frozen grilled chicken strips at "Smart and Final." It is very convenient. My dog loves 'em.

I just bought some of those yesterday at Sam's. They are SO convenient for me because I don't always feel like cooking a chicken breast when I want a salad with chicken...LOL The strips are the perfect solution. They thaw in the microwave in less than a minute.

Actually, I don't even use dressing to speak of anymore, and when I do use dressing, I ask for oil and vinegar. At home, I use olive oil with a dash of lemon juice, and a little black pepper. It's amazing how our eating habits change!! But because salad greens taste considerably sweeter to me now, and because I put meat on my salads now (to make it a complete meal), dressing just is overkill.

I do not even use vinegar or lemon juice any more. 1 tablespoon of good quality olive oil on my *really big* salad is good enough for me.
I finally found the hydrophonic heads of Boston lettuce today. I had been wondering when they would be back in my local store again. It seems to be an occasional thing and with them no washing salad greens is involved. Just remove the root stem, add with other salad veggies and enjoy. :-)

They also make a great Buffalo Chicken Salad. You can coat them with Frank's hot sauce and toss over a salad with some blue cheese dressing. Or saute some vegs, add the chicken and Atkins Terriyaki Sauce.
