Got Rhubarb?

I've know others who share your opinion. I think rhubarb is one of those
things you either love or hate, and there are a fair number of people on
both sides of the fence.

Personally, I love rhubarb, but it must be young and tender. The older
tough stalks are not very good.

I am sorry to say that you are not alone in hating rhubarb.
My wife hates it too, and lots of others. I am working on
the wife, presenting her with lots of good rhubarb pies.
She no longer refuses it outright, and last night she said
the pie was surprisingly good. Some people don't mind it in
a pie if it was been bastardized with strawberries, which I
personally consider to be a waste of good rhubarb and
good strawberries.

But don't worry about not liking it. It helps to keep the
price down :-)

LOL! You're right! At a former home, we had rhubarb that we didn't want
to keep. I finally got rid of it by digging as much root out as I could,
then spraying the remaining root with Round-Up. <G>

Does anyone have a tried and true recipe for rhubarb bread? I've looked in
all of my cookbooks, and none of them have a recipe. I don't want to just
grab one off the web.

Yes, the Killing of the Rhubarb is one my my best
gardening stories. Remember, I'm in Colorado, and the
only things that grows in our unadulterated clay soil are
generally the botanical equivalents of Hell's Angels -
tough and nasty. This particular rhubarb from hell
apparently had been there since the Jurassic period;
this huge ugly root that had to be hacked to death with
a sharpened shovel blade, and extracted in chunks.
I strongly considered pouring something Really Bad
into the hole, just to make sure it was not just merely dead,
but Really Most Sincerely Dead. But we moved the next
spring, so I don't know if the next owners had to put up
with the return of the rhubarb from beyond the grave or not.

I love it!

Many moons ago, we lived in a house where we had an alley behind the house,
and our garage was about 2 feet from the neighbor's garage, back-to-back.
There was a rhubarb plant growing between the two garages, and the rhubarb
was on our side.

One day our next-door neighbor had someone come in and lay tar between the
garages. I was SO MAD! I really wanted that rhubarb. Well, it wasn't
very long before said rhubarb plant forced its way up through the tar, and
was just as healthy and vigorous as it had always been.

My dad said he once saw rhubarb growing on a highway. ON the highway! You
can't kill 'em, so you may as well make a pie and shut up, huh? LOL!

Well, Carol, this is not a bread and adds strawberries, but it is
something I tinkered to perfection a few years ago.

Jean B's Strawberry-Rhubarb Muffins (12)

Unfortunately the texture changes for the worse if you try to add
even more rhubarb.

1 1/2 c chopped strawberries
1/2 c chopped rhubarb
3/4 c natural sugar
1 c all-purpose flour
3/4 c whole wheat flour
3 Tbsp wheat germ
1/2 tsp baking soda
1/4 tsp nutmeg
1/4 tsp salt
2 eggs
1/4 c light olive oil or other unflavored oil (or melted butter if
you are feeling sinful)
1 tsp vanilla

Preheat oven to 425F.
Combine strawberries, rhubarb and 1/2 c sugar and let stand 1
hour. Combine dry ingredients. Beat eggs and olive oil; add
vanilla. Combine with strawberry-rhubarb mixture, then stir into
dry ingredients til mixed. Transfer to 12 greased or sprayed
muffin cups. Bake ca 20 minutes at 425F (ca 25 minutes at 350F in
turbo).

I must have been projecting, since I love them. I might just have
to make some.... I keep trying to get back into a total LC WOE,
but my daughter's desires derail me. It's hard when you have
someone else who isn't LCing. :-(
