Gluten free cookie recipes

  1. I need to bake gluten-free cookies for a family get together this weekend & I
    am looking for recipes that people have tried and liked.

    Yes, I have googled and gotten a ton of interesting sounding recipes, but I am
    specifically looking for feedback from people who have actually MADE low carb
    cookies.

  3. Here is my favorite recipe. You must make sure that you have oats from a non
    contaminated supply. Just place oats in a blender or food processor until
    fine for oat flour. If you can't get good oats, use rice flour or more
    almond flour. I have added a link to a list of gluten-free foods for you

    Nancy's Low Carb Lemon Squares (bar cookies)Crust:3/4 cup almond flour1/4
    cup oat flour1/2 cup Splenda1/2 cup softened butter1/2 teaspoon guar or
    xanthan gum (optional, just helps hold it together better) Filling:2 large
    eggs1 cup Splenda1/2 teaspoon baking powder1/4 teaspoon salt2 tablespoons
    lemon juice Blend crust ingredients and pat into a Pam sprayed 8x8 baking
    pan. Bake for about 18 minutes or until very lightly browned and set (not
    shiny any more). Beat the ingredients for the filling (topping) for about a
    minute, pour evenly over the pre-baked crust and bake again for about 15-20
    minutes or until barely browned and set. Let cool at room temperature, cut
    into 16 even squares, eat one and cover the rest. Keep cool in the

    I don't have any specific recipes, but I think you'll find that almond
    meal/flour lends itself well to cookies. You might do a search for that.

    This will be my biggest challenge since I stopped eating grains -- I never
    stopped baking for everyone, I just stopped eating it myself.

    I think I will INSIST that my step sister with the kids with gluten intolerance
    take ALL the leftover cookies home with her🙂Robyn

    Google Myra's Basic Cookie Recipe in this group. Then you can adjust
    the recipe to try various additions to flavor them. I like to add
    cinnamon and then roll them in Splenda and cinnamon. I flatten them to
    make them nice and crispy. I keep them crispy in a container for over a
    week (assuming they last that long). You can also add chocolate,
    raisons, nuts, various extracts for flavoring, etc.

    What ever happened to Myra's cookbook? I know she stopped posting recipes at
    one point, saying she was working on a cookbook. Then she was diagnosed TII
    and started losing a lot of weight, then her posts kind of dropped off. I've
    been here only intermittently, so maybe it has been explained. She
    definitely is great at devising lc recipes. Is anyone still in touch with
    her?

    I imagine it is. I think the lc cookbook market is probably pretty saturated
    these days. Plus there are rumors that the lc "fad" has nearly run its
    course, which would tend to make publishers nervous. Too bad, as she has
    developed some great recipes, which she was generous enough to gift us with
    here at asdlc.

    I wouldn't know since I don't buy much processed food, but the "low-carb
    gluten-free cookies" that I made for my step-sister's kids were pretty good.

    And since the kids liked them, I sent ALL the left-overs home with them which
    made them low calorie, too -- at least for me!
