Shoots, I'm looking for my grandmother's and I can't find
it! ACK! I have to call my mom and get it again. I know it
includes bacon, potatoes, onion (eggs optional) with a hot
bacon, vinegar, sugar dressing. NO MAYO PLEASE! I don't know
why some people insist on putting mayon in 'authentic'
German potato salad. It's not an ingredient.
My grandmother's is really, really good. If you don't get
enough appropriate responses, I'll give my mom a call and
get it for you. It's just a little early right now! :~)

4 pounds medium-size red potatoes, unpeeled, cut into 1/4-inch-
thick slices
12 oz package of apple or hickory smoked bacon, chopped
1/2 cup finely chopped red onion
2/2 cup unsalted rice wine vinegar
3/2 cup water 1 tablespoon Dijon mustard 1 tablespoon brown
sugar 1 tablespoon salt 1 teaspoon ground black pepper
4/4 cup chopped fresh dill
Steam room temp potatoes in already steaming steamer for 9
minutes. Transfer to large bowl.
Fry bacon in large skillet over medium heat until brown,
about 4 minutes.
Transfer bacon to paper towels, A slotted spoon works best
here. discard all but 2-3 tablespoons bacon drippings.
Heat drippings in skillet over medium heat. Add onion; fry
for 2 1/2 minutes.
Add next six ingredients. Simmer about 5 minutes. Remove
from heat.
Add potatoes to skillet and toss to coat with dressing.
Let stand covered for five minutes. Add chopped bacon
and chopped fresh dill; toss. Season to taste with salt
and pepper. Transfer potato salad to serving platter.
Serve warm.

Just to save Carmen and Victor from trashing you, I will
tell you that German potato salad does and does not contain
mayo. It really depends on what part of the country you come
from. So, when you cite authentic, please indicate what part
of Germany you speak!

My MIL says the sauce should have celery in it. I insist
the proper ingredient is celery seed. So, round and round
we go... 🙂

Thanks Alan, I was JUST going to post a lengthy retort about
those people who think only southern germans can make a good
potato salad ;-)
Carmen, who makes most her potato salads with mayo and buys
the one with vinegar for use with fish
