Anyone know where I can get either a larger drive sprocket or a smaller driven/wheel sprocket for a torker giraffe? I tried using the crank set up from my daughters bike but the crank arms where too short

Get a smaller fixed gear cog. Search ebay for Fixed gear cog or go to your bike shop. Should cost you between $10-$20. Get something like 15T or 14T to start.
