Pace® Picante Sauce makes an OK quick gazpacho base.

Add finely chopped cucumber, and maybe a fresh tomato. Chill. Thin
with cold water and/or lemon juice if it's still too thick after the
salt in the picante sauce pulls the water out of the cucumber.

Well, this is industrial "better living through chemistry" America. We
can have a mediocre version of anything we want in a can/frozen or just
add water "mix".

I haven't looked lately but Trader Joes had it waxed paper
containers. I did not think much of it.

I suspect I would like that as little as I liked the Trader
Joe's version. Home-made gazpacho keeps for 2-3 days before it
loses flavor.
