You can blanch/cookoff the chips first, do the fish and then as the
fish is draining, throw the chips in for the second time.

Not me but I've heard of people complaining, wondering why their chips
tasted like fish. I haven't deep fried anything in at least 4 or 5 years so
personally I don't encounter the problem.
