Frozen corn

  1. I'm making a concerted effort to use up everything in the big freezer.
    Part of that was an inventory of the contents (posted it on the door).
    I discovered that I have four bags of frozen corn niblets.

    Anybody have any ideas on recipes for using up the corn, besides just
    having corn as a side dish?

    I don't see that, removed from the cob, it would be any different from
    any other frozen corn. :-)

    I'd consider cutting it into slightly smaller disks and serving it
    steamed with shrimp, crab parts, whole clams, crawfish (if you can get
    them) and baby potatoes.

    I know that dish has a name, but I can't think of it at the moment.

    Corn chowder? Crab and corn chowder? Add it into cornbread? Pasta
    primavera? Chicken pot pie?

    I'm sure there are a ton more recipes out there, but this is what comes to
    mind to me first.

    Fresh Cornbread

    1 cup cornmeal
    1/2 cup flour
    4 teaspoons baking powder
    1/4 cup sugar
    1/2 teaspoon salt
    1 cup corn kernels
    1/2 cup milk
    1 egg
    1/4 cup vegetable oil or bacon drippings

    Combine the dry ingredients. Add the corn, milk, egg and oil and mix
    well. Pour the batter into a greased skillet or nine-inch baking pan.
    Bake at 450oF for 20 to 25 minutes or until golden brown. Serves 8.

    Corn salsa
    Corn on a salad
    Corn in your stew
    Corn in your tacos
    Chile con Corne
    Corn fritters
    Mix it with carrots and lima beans and call it Succotash
    Mash it up and add some cream and make creamed corn

    Cook the corn, cool, and mix it with an equal amount of diced beets
    (canned will do). Dress with salt, pepper, and balsamic vinegar.

    What size bags you talking... could be 12 ounces to like 4 pounds.

    If they've been in the freezer a really long time, like more than a
    year, they'll probably be coated with hoar frost, rime, and/or are
    pretty raunchy tasting. I'd try a small amount nuked to see how it
    tastes... like why waste a bunch of other ingredients that are more
    costly than the stinkin' niblets (niblets are the least expensive
    veggie). If they still good I would suggest a batch of corn fritters
    or corn bread for starters. If the corn is kinda like not too good
    I'd rather toss it out into my back yard for the birds. I mean frozen
    niblets are like a buck a pound... even to make corn chowder you'd
    need to add a bunch of more expensive ingredients, like a few dollars
    worth of cream. Personally I prefer to use frozen veggies while still
    within the use-by date, otherwise they become critter feed.

    I've had rave reviews using it to make Barb Schaller's Corn Relish-
    Although Barb uses fresh, the frozen kernels work great. You can google
    her recipe for Blue Ribbon Corn Relish. My Mastercook isn't loaded on
    this puter so I can't access it for you.

    LOL with slight variations you have a dish created where my parents live in
    the low country of South Carolina. Corn on the cob (shucked and snapped in
    half), blue crab, shrimp, local freshly made sausage, new potatoes, juice of
    a couple of lemons, some beer and crab boil mix. Throw it all in a pot and
    eventually you have Frogmore Stew

    Anything you can make with fresh corn, you can do just as well with
    the frozen stuff... how about some corncakes, or corn chowder?

    Corn chowder
    Corn fritters (ahhhh, the memory of mom's corn fritters is so sweet!)
    tamale pie
    corn and black bean salad

    Gosh, just off the top of my head, beef stew and vegetable soup. You
    could toss some corn in with a salad or mix it with other vegetables.
    Google for "corn recipes" and I am sure you can find tons of ideas.

    salad topping
    fried rice
    mashed potato style potato pancakes
    soups especially corn chowder
