There seems to be a bumper crop coming from Hawaii early this year. I picked up three for $1.89 each - and am wondering what else to do with them (other than just eat them!). They are a bit on the [censored] side but still well worth the price paid. Any suggestions...?

They work well in Barb's rhubarb custard cake. Shrimp, Chicken or Pork Stir fries. Rotisserie one on the bbq with a brown sugar rhum sauce. Cheese platters. CheeseCake. put on top of Pork Chops then Bake in the oven. Same with fish or shrimps etc... On ice cream Make into a sauce and use on BBQ ribs. Fruit Salad Pinned to a ham with cloves Stewed Pineapple crisp

A local Kroger chain, King Soopers, has had them on sale for $1.00 each all week! They are good-quality too - mighty tasty.

A local Kroger chain, King Soopers, has had them on sale for $1.00 each all week! They are good-quality too - mighty tasty.
The best I did was on Easter weekend when I found them for $1.87 and got two. The week before I had paid $5.99 for one. The cheap ones were delicious. They were perfectly ripe and nice and sweet.

A lovely combination is chunks of fresh pineapple tossed with a generous quantity of freshly chopped mint. I usually serve this as a side dish with a barbecue, but as we're now heading for our winter months, it'll be a long time before fresh pineapples are available.

Thanks to everyone who responded. I think I will make some pineapple crisp and maybe Barb's custard cake and/or ice cream. Not that we need any sweets in this house, LOL...

I've come across the combo before, where the ineaplle was eihter raw (think salsa or salsa) or had been grilled. I'm thinking basil cream or ice cream with pineapple would be good, too.

Cut them up and freeze the little pieces. Use in smoothies. If you use frozen fruit, you don't need to add ice cubes. (Pineapple and banana is quite good together.)

3-3 1/2-lb. pineapple or 4 cups unsweetened pineapple juice water 1/4 lb. fresh ginger 1/2 c. lemon juice approx. 3/4 c. sugar
Trim pineapple of peel and core and cut into 1" chunks. Whirl pineapple chunks, a portion at a time, in a blender with 2 cups of water. (You can usually put about half the pineapple and half the water in the blender at a time and do it in 2 batches.) Pour puree through a wire strainer (or several layers of cheese cloth, or a jelly bag) into a large bowl, squeezing pulp to remove all juice. Discard pulp. Scrub ginger and cut in 1" chunks. Whirl ginger in blender with an additional 2 cups of water. Pour through the wire strainer (etc.) into pineapple juice, squeezing liquid from pulp. Discard pulp. Add lemon juice and sugar to taste to the juice. Pour into a pitcher, cover, and chill about 2 hours or overnight. Stir and pour over ice to serve. Makes 7-8 cups or about 10 servings.

Perhaps odd but that word does not appear on the net... anyways that recipe is an awful waste of a pineapple... why not just smash it against a brick wall.
