I'm amazed1 Had never eaten any but the canned green beans. The fresh ones
are quite different!
Someone fixed me a quiche with fresh green beans and some fresh broccoli,
all very good! The beans were lightly cooked, very crunchy and juicy.

Oh, my, there are very few canned vegetables that I think are
worthwhile--tomatoes, creamed corn (but too carby now), beans other than
green, most frozen are pretty close to fresh. Costco has wonderful big
bags of frozen "haricot verte", baby green beans.

Growing up, we always had canned green beans and I really never thought about
them one way or the other. If someone served them, I ate them but I didn't like
them enough to buy them or make them.
And then I tried fresh green beans and like you, I really, really like green
beans.
Try tossing them in a little olive oil, with some salt & pepper and garlic and
roasting them in the oven.
I also like to snack on them raw🙂Robyn

I personally prefer the fresh variety of any vegetable. If for some reason
this in not convenient, my next choice is frozen.
I don't like canned food. Always too much salt.

Try steaming fresh green beans until just tender and then
slather some pesto on them...

And they aren't over-loaded with sodium.

I like frying bacon and a little onion and then put the green beans in
(frozen or fresh) and let that simmer on low till the beans are done -
tastes very good - I don't usually drain the bacon fat. I like using the
frozen french cut for this
Diane

how do you roast your green beans in the oven.
i do asparagus in oil and spices, in a 400 degree oven for 10

I would like to know too.
I have made asparagus in a frying pan with olive oil garlic and found it to
be pretty good. Sure beats boiled! First time I ever tried it (fried /
baked) was at a restaurant where it was the vegetable of the day. As matter
of fact, that was actually the first time I actually liked asparagus. I
asked the waitress to find out what they cooked it in, and was told butter
and lemon juice. I find, though, that lemon juice tends to over power the
flavor.
