Flavor combinations with fruit

  1. I've been in an ice cream/gelato/sorbet making kick lately. My latest was a
    blackberry-strawberry gelato with chocolate flakes. It got me thinking about
    all the different combinations of flavors that I think would be good, which
    made me want to ask you all what combinations you think would be good.
    A couple I've already decided on or already made:
    Blackberry-Strawberry gelato
    4 Berry sorbet (blackberry, raspberry, strawberry and boysenberry)
    Raspberry and Peach gelato
    White Nectarine and Yellow Peach sorbet
    Strawberry and White Peach sorbet
    and finally, Chocolate Raspberry gelato

    What are some combinations you like?

    Eh, I hate to reply to myself, but I forgot to mention the Lime Raspberry

    Never made gelatos, but some fruits combine very nicely with flowers - lemon
    and elderflower, strawberry and wild (dog) rose, blackberry and/or
    blackcurrant and lavender - although you can mix and match these to your own
    tastes. It will likely take a bit of experimentation with ratios to get it
    right, but less so with the lemon and elderflower. Well worth a shot IMO.

    I make a summer fruit and flower wine combining some of the above and more
    that's absolute nectar BTW - not had chance this year though, unfortunately!
    Usually a medium blush colour, and it's especially gorgeous if made lightly
    sparkling, and served lightly chilled... damn talk about getting
    sidetracked...

    In general I don't like mixed fruits. To me you can't
    taste each individual fruit because of interference from
    the other fruit and the combination of flavors it not that
    interesting. I like the undiluted flavor of each individual
    fruit.

    That being said, one combination I do like is peach
    and raspberry. Although I mainly like it in a dessert
    I make with meringue shells filled with vanilla ice cream
    and then fresh peach slices and raspberries over the whole
    thing. You can still taste the individual flavors. If you
    blend them all up to make ice cream it might still be okay.

    I do like chocolate with strawberries and raspberries.

    I can't really think of anything else that would
    appeal to me.

    I just stick with single flavor when I make ice cream.

    Recently we did a Pineapple Sorbet (one of my favorites), and a vanilla
    ice cream with cherries and blueberries in it. I'd recommend both
    flavors.

    However, don't make the same mistake we did: fresh cherries with frozen
    blueberries. The frozen bb's had a slight watery crunch to them that
    slightly overwhelmed the texture and taste of the fresh cherries. Next
    time, it'll be fresh all the way.

    I make a lemon grass infusion that's really more like a syrup, which I
    pour over fresh fruits in fried won-ton cups. I imagine it would taste
    good in a sorbet.

    The infusion is simple: A few stalks of lemon grass (freshly cut is
    better) two or three inches long (maybe half a dozen or so this size).
    You can peel the stalks if you like but it isn't necessary. Bruise the
    stalks with the back of a knife, then tie into a cheesecloth sachet.
    Bring a cup of water with 1/2 to 2/3 cup sugar to a boil. Make sure all
    the sugar dissolves then drop the lemon grass in and turn off the heat.
    Let the lemon grass steep until the hot sugar water cools enough to
    use. Remove and discard the lemon grass.

    There are variations such as adding a little grated ginger or some
    orange zest, but the basic infusion is great with all kinds of fruit.
    And a little goes a long way. I keep some in my freezer all the time.

    The lemon grass is supposed to have medicinal properties but I like it
    just because it tastes great and is sufficiently different from real
    citrus to be interesting.
