Ok, so I tried the Carbquik this morning.
I did the Simple Drop Biscuits recipe, which actually calls for 2cup mix
and 1cup+1tbsp water for 15 biscuits. Being that the whole box is only 16oz,
I didn't want to blow the whole thing in one run, plus who needs 15 biscuits
;-)
So, using my friend MasterCook, I scaled it to 1 serving at 2tbsp mix and
1tbsp + 1 splash of water (1/16 of a tbsp ;-)). Mixed it in a bowl, threw it
into the oven at 350 for 12 minutes and drank my coffee.
The biscuit didn't rise as much as I thought (maybe 2x), but then again I
don't think "drop" biscuits are supposed to. When it came out, I dropped a
little butter on it, and dug in.
I think it is pretty damn good! I haven't had Bisquick in a looong time, and
a biscuit in 6 months, but still I think it would compare pretty favorably
even to a non-LC follower.
I don't have a blood sugar meter, so I don't really have a way of measuing
my body response; I'll leave that to some of the more scientific on the
board. I've been holding steady at 192 for about a week, so if I go up
tomorrow or the next day that will be a good indication I guess. It looks
like they use the Dreamfields type of "technology", at 10g - 8g "insoluble"
fiber.
I'm going to make the pizza recipe at lunchtime (or dinner) and see how it
comes out, so of course you'll be hearing from me.
