Eggs florentine?!

  1. Hi cooking peoples,

    Just a query about something I was served this morning. I had time to
    kill (had to take husb. to airport for 6am and pick up suit at 9am) so
    I had breakfast at a cafe.
    I ordered eggs florentine - English muffin topped with spinach, poached
    eggs and hollandaise sauce, classic stuff- but when my meal arrived and
    I tucked in the muffin hadn't been toasted. Of course this meant that
    the moisture from the spinach and the egg sopped straight into the
    muffin. I couldn't even get it to stay on my fork it was so wet. Not
    happy.
    So is this a normal thing for a cafe to do? Any eggs florentine
    specialist out there?

  2. Doesn't sound the best, Fay! I would expect the muffin to be toasted.
    I'm not good at complaining in a cafe, other than hurrying up a long
    wait.
    Give the cafe another visit but mention how your last meal was
    disappointing.

    Love the dish. I make it every year for my MIL on Mother's day.

    Toasting the muffin is a must. For regular eggs benedict, too.
    The other mistake I see a lot with eggs florentine is watery
    spinach. Talk about ruining it. There's already enough
    liquid going on there with the eggs and the sauce.

    I'm not a specialist by far. I'm trying to think about the eggs florentine
    I've cooked and been served in restaurants. Here is what I know; When I
    make them at home I lightly toast the muffins. When served out I'm not
    sure. I do know they are good eating.

    They should have been toasted to medium - some crunch but not dark.
    Also sounds like they didn't squeeze the water out of the spinach
    well.

    Sounds like the spinach might not have been properly drained, just to
    compound the problem.

    Since you're in Melbourne, you want to try the Eggs Florentine at Cafe
    Sweethearts (in South Melbourne) sometime. Their version has toasted
    muffins, ham between the spinach, and no hollandaise but instead cheese
    on the top and then popped under the salamander. Delicious.

    Not likely to go back, since I live on the far eastern outskirts of
    Melbourne. Coffee was good though.

    The times I've had it they came sans muffin. Just a bed of spinach, poached
    eggs and a white sauce. Toast on the side.
